Oven Fried Garlic Chicken with Homemade Garlic-Thyme Mashed Potatoes

Oven Garlic Fried Chicken

  • about 1/3 cup of melted butter (t tbsp.)
  • 3-4 tablespoons of garlicDSC00138
  • 4 skinless boneless chicken breasts
  • 1/2 cup of Italian bread crumbs
  • teaspoon of salt & pepper
  • 1/2 cup of shredded mozzarella cheese

Preheat your oven to 400 F. Line a baking pan with aluminum foil and place rack on top of pan. In a bowl mix together butter, garlic and salt. In another bowl, mix bread crumbs and pepper together. Dip each piece of chicken into the butter mixture and then the bread crumbs. Place on rack and bake in oven for 30-40 minutes until crispy. Top with mozzarella cheese.

Homemade Garlic Mashed Potatoes

  • About 2 Lbs. of white potatoes
  • 6 tbsp. of butter
  • 1/2 cup of milk
  • teaspoon of salt/pepperDSC00139
  • tbsp. of garlic
  • 1/2 teaspoon of thyme

In large pot, boil 5-6 quarts of water. Wash potatoes and begin chopping them into little cubes. Place cubes in water and boil for about 15-20 minutes until tender. After potatoes are tender, drain the water and add butter, milk, salt, pepper, and garlic. Mash/whip potatoes over a low heat.
